Kaseri Bāth (Sweet Upma)

Kaseri Bāth is especially recommended for Yoga practitioners.  It calms the mind and keeps it fresh. It may be used by all constitutions.

Kaseri Bāth can be served as part of the main meal and it is especially recommended to be served with Upma or Idli. Best served warm.

Depending on the type of sugar used, the taste and colour may vary.

Kaseri Bāth (Sweet Upma)

Preparation 30 minutes

Serves 8 – 10 small servings

Ingredients :

1½ cups/350mL warm water

1 pinch saffron – approximately 15 threads

1 cup/250ml ghee (liquid)4V7A3453_1980x1297

10 raw almonds

10 raw cashew nuts

1 cup/170g medium-ground semolina (ravā)

¼ cup/40g raisins

3 medium-sized bananas – approximately 200g-chopped

¼ tsp fine rock salt

1½ cups/300g light brown sugar

(If wanting less sweet – reduce the amount to 1 cup or to acquired taste)

6 cardamom pods (½ tsp)

Preparation :

Measure out the 1½ cups of water and place the saffron threads to steep for 15 minutes.

Peel & cut the bananas into 1 cm pieces.

Cut the almonds into 3 pieces and the cashew nuts into 2 pieces.

Remove the hard shell from the cardamom, and place the small black seeds in a mortar and pestle, grind into a fine powder.

Measure out the remaining ingredients.  Set aside.

Over medium heat, pour the ghee into a medium-sized skillet/bandalei, add chopped almonds, cashews and semolina.

Stir continuously for approximately 10 minutes, or until the cashews have turned golden-brown in colour.

Pour in the saffron water, add raisins, chopped banana and salt.

Stir continuously for approximately 3 minutes.

Pour in the sugar, after about 30 seconds of stirring the Kaseri Bāth will become considerably softer and liquid in consistency, and then will thicken slightly again.

This process will take approximately  2-3 minutes, of continually stirring; or until the sugar has dissolved.

While stirring, once you feel the Kaseri Bāth is thicker in consistency and starts to slide away from the pan – it is ready.

Turn off the heat, stir in the cardamom powder, mixing well.

Allow the Kaseri Bāth to rest for a minute and for the flavours to deepen.  Serve warm.

KASERI BATH (SWEET UPMA)

É especialmente recomendado para praticantes de Ioga.

Acalma e refresca a mente. Pode ser usado por todas as constituições.

Kaseri bath pode ser servido como parte da refeição principal e é especialmente recomendado que se sirva com Upma ou Idli. É melhor servido quente.

Dependendo do tipo de açúcar usado o sabor e a cor podem variar.

As medidas são sempre em colheres cheias excepto se mencionado o contrário.

Serve 8-10 porções pequenas

Tempo de preparação 30-35min.

INGREDIENTES

• 1 1/2 chávena/350 ml água morna
• 1 pitada de açafrão em fio (aproóx. 15 fios)
• 6 vagens de cardamomo
• 3 bananas médias cortadas:1cm. (apróx. 200g)
• 10 cajus
• 10 amêndoas
• 1 chávena/165 gr semolina de trigo
• 1 chávena/250 ml ghee
• 1/4 chávena/35 gr passas
• 1/4 colher de chá de sal
• 1 1/2 chávena/300 gr açúcar mascavado claro (menos doce coloque 1 chávena/a gosto)

PREPARAÇÃO

1. Coloque o açafrão de molho na água morna por 15 min. (Enquanto prepara os restantes ingredientes).

2. Corte as bananas, corte as amêndoas em 3, corte os cajus em 2. Remova a casca ao cardamomo e triture as vagens num almofariz. Prepare os ingredientes.

3. Em lume médio aqueça uma frigideira com o ghee, as amêndoas cortadas, os cajus cortados e uma chávena de semolina.

4. Mexa sem parar 10 min. ou até os cajus dourarem.

5. Adicione a água do açafrão, as passas, as bananas e o sal. Mexa continuadamente 3 min.

6. Acrescente o açúcar (após 30 seg. ficará macio e liquido e depois endurecerá ligueiramente). Mexa continuadamente 2-3min ou até o açúcar de dissolver.

7. Quando o Kaseri Bath começar a engrossar e a despegar da frigideira está pronto! Desligue o lume.

8. Adicione o cardamomo e misture bem.

9. Deixe assentar por 1 min para avivar os sabores.

Sirva quente!
